Roasted with cider, red onion and sage for a good few hours at about 140c . Apple sauce (butter, squeeze of orange & royal gala apples – the Cooking Rat is not happy with the apple sauce. Too sweet and no lemons in the house ….).
Meat from Allens of Mayfair. A snip at £7. Great butcher, very helpful and incredibly good value (in spite its location).
Good Chardonnay from Argentina (yes it exists).
