A pig’s trotter
Lots of onion
Lots of garlic
Bottle of red wine
Seriously brown the beef
Put beef in large casserole pot
Finely dice the veg and slice the onion. Fry onion well and then the veg, then add flour.
Put all veg into the pot containing the shortrib, then add beef stock & red wine and throw in the trotter
Seal with tin foil & cover. Put in oven @ 100c for 5-6 hours.
Remove ribs & trotter from sauce then strain and reduce. Add mustard to reduced sauce.
Roast marrow bone for 30 mins
Serve with potato dauphinoise (Charlotte or other waxy potato, cream, grated garlic)
