Loads of coriander and mint
Peel cucumber, scoop out watery bits & seeds. Then cut into chunks.
Put the chunks into a sieve over a bowl and salt lightly.
Leave for 10-20 mins.
Thinly slice all the other ingredients. I would mandolin the fennel.
Roughly chop the herbs.
Squeeze over a good bit of fresh lemon juice.
Mix in the cucumber & herbs.
Serve with a curry.
